Chocolate Brownies

Ingredients
200g (8 rows) Dark Cooking Chocolate, chopped
125g butter
1 cup brown sugar
2 teaspoons vanilla essence
2 eggs, lightly beaten
1 cup self-raising flour
1 cup chopped pecans or walnuts
Method
1. Preheat the oven to 160ยฐC. Melt the chocolate and butter in a bowl over simmering water or in the microwave oven on Medium (50% power) power for 2-3 minutes.
2. Stir in the sugar, vanilla essence and the eggs. Mix well. Add the flour and nuts, and stir well.
3. Pour the mixture into a lined 28 x 18 cm slab pan. Bake for 40-45 minutes.
4. Leave in the pan to cool. Dust liberally with icing sugar before serving.
5. Note: If serving as a dessert, allow to cool in the pan for 20 minutes before cutting into pieces. Sandwich pieces together with some ice cream and serve with Chocolate Sauce.
